I’ve stopped including my salad recipes since I almost always make a variation of the same salad. To make sure the salad recipe isn’t lost in the pages of time, I will write that recipe here.
Salad:
- Lots of ripe tomatoes
- Cucumbers
- Bell peppers
Dressing
- Olive oil and balsamic vinegar
Chop tomatoes, cucumbers, bell peppers into a bowl, and cover liberally with oil and vinegar.
Yep. That’s my simple salad recipe. I try to use multicolored tomatoes and bell peppers but when times are scarce I’ll use whatever I find. I frequently add more ingredients to this; the local farmers market sells sunflower sprouts for a dollar and I typically use those, or other types of sprouts, or sometimes scallions, sometimes a friend will bring lettuce, or perhaps a different salad dressing.
In the great “do I peel the cucumbers” debate, I taste a cucumber skin first, and if it is bitter, I’ll peel them, otherwise not.
I find a salad goes a long way in making a whole meal tastier, and so I try to provide one with every meal.
